Red Potato & String Bean Salad (serves 6)
Ingredients:
3 lbs. small red potatoes
1 12 lbs. fresh green beans
1 bunch scallions (cut into one inch pieces)
2 cloves garlic rough chop
1 cup olive oil
1 tbsp. Dijon mustard
2 tbsp. parsley chopped fine
Salt, Pepper
Boil potatoes until tender when pierced with a fork, drain and let cool. Add green beans to boiling water and blanch for 5 minutes. Transfer green beans to a bowl of ice water for 5 minutes, then cut into 2 inch pieces. In small bowl, whisk together olive oil, mustard, garlic, salt and pepper (taste for balance). When potatoes are cool enough to handle, quarter or thick slice. Combine potatoes, green beans and scallions in large bowl. Pour on dressing and toss well. Sprinkle with parsley and serve at room temperature.
